I have a edit field in my ios application. Without doing any work at all, if I tap in the field the keyboard appears--which was really awesome. But the default layout is missing the _ (underscore) key. I would really like to have that be part of the default layout. Where do I begin to make this change?

If you want to modify the keyboard for your application, you'll have to go native API
