Hello, how can I select multiple texts and edit them, like in the gif below ?

Creator has a simple multi-cursor support. This is activated by Alt+Shift+CursorUp/Down.

The example you showed is not possible at the moment. However, I slightly remember there was already a request for this at bugreports.qt.io

For those stumbling upon this thread, you can now use Ctrl+d after selecting the word to do this.
