Shouldn't Qt 5.1 include iOS support (technical preview level)? I installed the Mac edition but I don't seem to find it!

I am already aware of that, and I have successfully tried it. I just had the impression that iOS's technical preview would be included with the Qt 5.1 SDK.

AFAIK, each Qt build is for one platform (thinking about the platform plugin not only the processor architecture).
I think iOS will get it's own SDK in the near future (it's only a personal opinion). Having it separated from the OS X SDK is (again personal opinion) is better, not all people interested in OS X want to build for iOS and the reverse is also true.

Now that you mention it, I think I noticed a separate Android installer for Qt at the download section, so maybe you are correct!

Yes! :) So, I guess that we should expect separate versions for iOS as well, since both Android and iOS are given the "technical preview" status for Qt 5.1.

Qt 5.1 is shipped as source-only for iOS, which means you'll need to download the source code version and build it yourself. Digia has no plans (for 5.1 AFAIK) to release pre-built versions.
There will be a pre-built Qt4iOS SDK for Qt 5.1.0 (and Qt 4.8.5) available soon, which will include some additional features not available in the official Digia release.

There are pre-built Qt for iOS SDKs for Qt 4.8.5/5.0.2/5.10 available from http://www.mediator-software.com (as well as source code). These SDKs contain additional functionality and bug fixes (for iOS) that are not present in the official releases (yet).
